Renaissance Mutton from Wethers
Production Checklist:
- Discuss requirements with your buyers
- Castrate the males
- Decide what age your wethers will be at time of slaughter
- Animals must be at least two years of age/show four broad teeth
- Set a schedule for slaughter
- Finish on lowland grasses, heather or similar but be wary of over-fattening
- Be sure the animal’s fat cover and conformation matches the market need
- Co-ordinate sale and slaughter to maximise return
Renaissance Mutton from Ewes
Checklist for Producers:
- Discuss requirements with your buyers
- Assess the flock after lambing and identify suitable ewes
- Ewes must be at least two years old/showing four broad teeth but there’s no upper age limit
- Set a schedule for slaughter
- Ask questions of the supply chain to double check requirements
- Finish on lowland summer grasses or heather and over-winter as necessary on a forage-based diet
- Be sure the animal’s fat cover and conformation matches the market need
- Co-ordinate sale and slaughter to maximise return
